The delightful minty green colour of these fresh-tasting sweets comes from food colouring. Here, traditional liquid food colouring is used, but if you are using gel or paste food colouring, you will only need the tiniest amount. The green colour should be subtle and light, so do not use too much!

Ingredients

  • vegetable oil, for greasing
  • 50 g/2 oz/½ cup icing (confectioners’) sugar

Method

  1. Grease a baking tray. Combine the icing sugar and cornflour in a mixing bowl. Pass the mixture through a sieve (strainer) into another bowl positioned underneath, to ensure it is well mixed. Liberally sift some of the mixture over the greased baking tray.
