This delicious sweet is so named because of its resemblance to the sea foam that forms along the coast of the Irish Sea, where the sweet was originally made. Made using soft light brown sugar, it is a pale caramel colour studded with nuggets of crystallized ginger, which cuts the sweetness and gives it a spicy bite. Let the mixture fall from the end of your spoon to create irregular blobs of foam.
