The white swirls of meringue in these sweets are offset by the bright red of glacé cherries. Use the best quality glacé cherries you can find, as they vary greatly in flavour. The vanilla and almond extracts add a delicate, subtle taste to the sweets, so that the cherries are not too cloying.

Ingredients

  • 200 g/7 oz glacé (candied) cherries

Method

  1. Line a baking sheet with baking parchment or waxed paper.
  2. Chop 150g/5oz of the cherries into pieces, then slice the remaining 50g/2oz in half.
  3. Put the sugar, glucose syrup, salt and water in a heavy pan and place over a medium heat.
