There are two main types of nougat: white and brown. The white type is made with beaten egg whites and has a softer texture than the brown version, given here, which is made with caramelized sugar. This recipe is for French nougat, which is thought to date back to the 18th century. It is a wonderful contrast in tastes and textures, with soft, chewy nougat studded with crisp nuts and sweet, flavoursome candied fruit.
