Coating soft fruits, such as berries, grapes, physalis or tangerine sections, in a thin layer of barely caramelized sugar lends them a completely different quality. The fruits retain their wonderful freshness but they are turned into something surprising. These look extremely pretty served in mini paper sweet cases. You must eat them within a few hours, or the juices of the fruit will start to dissolve the coating.
