Candied citrus is one of the luxuries of life that is somewhat overlooked outside Italy and France, though it is now possible to buy good-quality candied fruit in delicatessens and some supermarkets. Although the process of making it takes a long time, it is worth making it yourself as it is easy and the result keeps well in a tightly sealed container in the refrigerator. Candied fruit is useful in many recipes and tastes divine dipped in chocolate, as here.
