If you have beautiful, fragrant roses growing in your garden you are very fortunate indeed! This is a wonderful use for the petals when you have a glut of flowers in the late spring and early summer, and the candied petals make a stunning decoration for desserts or cakes, or a glass of champagne.

Ingredients

  • unsprayed, fragrant garden roses
  • egg white
  • caster (superfine) sugar

Method

  1. Position sheets of baking parchment underneath cooling racks on a work surface to catch the sugar.
  2. Gently separate the rose petals from the flowers, one rose at a time. Keep the other roses in water.
  3. Very lightly brush the petals with egg white, using a new paintbrush. Do not dip the brush into the egg whites each time, as only a thin coating is requi
