Violets, like most roses, have a distinctive, intoxicating fragrance. Their perfume creates a wonderful flavour that works well as a sweet decoration. Their pretty purple hue is even more attractive when coated in a delicate layer of sugar. Make sure any flowers you use are edible and have not been sprayed with any chemicals.

Ingredients

  • unsprayed, fragrant sweet violets
  • egg white
  • caster (superfine) sugar

Method

  1. Position sheets of baking parchment under cooling racks on a surface to catch the sugar. You will also need a new, soft, small paintbrush.
  2. Keep the violets in water while you are working with one flower at a time. Very lightly brush the petals on both sides, one at a time, with egg white. You do not need to dip the brush into the egg wash each time, as you want
