This fresh version of Turkish delight tastes very different from many of the commercially produced versions, so it is worth trying even if you think you do not like it. The texture is soft and silky, and the ancient combination of perfumed roses with a hint of lemon makes these fragrant treats a real delight.

Ingredients

  • butter, for greasing
  • 450 g/1 lb/ cups caster (superfine) sugar

Method

  1. Grease an 18cm/7in square tin (pan) and set aside.
  2. Put the sugar, 150ml/¼ pint/⅔ cup of the water and the cream of tartar into a heavy pan. Stir over low heat to dissolve the sugar, then bring to the boil and boil, without stirring, until it reaches the soft-ball stage (114°C/238°F). Set aside.
  3. Combine the cornflour, icing sugar and 50ml/2fl oz/¼ cup
