The commercial versions of these brightly coloured orange wedges have long been popular confections. These home-made ones retain the appealing texture and tang of the bought variety, but are made with freshly squeezed orange juice and contain no artificial colourings, flavourings or preservatives.

Ingredients

  • grapeseed or groundnut (peanut) oil, for greasing (optional)
  • enough oranges to make 150 ml/

Method

  1. Sprinkle a 25cm/10in square cake tin (pan) with water, or lightly grease the tin and line it with clear film (plastic wrap). Set aside.
  2. Juice the oranges and strain the juice. Put the orange juice, sugar, and cream of tartar into a heavy pan and heat over low heat to dissolve the sugar.
