Gumdrops are dense and chewy. They can be made in an assortment of colours and flavours. These are made with spicy candied ginger, which creates a gumdrop that packs more of a punch than store-bought varieties. The texture of the ginger contrasts well with the gummy sweet, and together they form a delicious treat.

Ingredients

  • grapeseed or groundnut (peanut) oil, for greasing (optional)
  • 20 g/¾ oz

Method

  1. Sprinkle a 20cm/8in square cake tin (pan) with water or lightly grease the tin and line it with clear film (plastic wrap). Set aside.
  2. Dissolve the gelatine in the cold water in a small bowl.
  3. Combine the caster sugar and the hot water in a pan and heat until the sugar has dissolved. Bring to the boil and boil, without stirring, for 10 minutes.
