You can use apples such as Bramley or Granny Smith for a more tart paste, but this simple recipe is also a great way to use up any windfall or floury (mealy) apples. These are intended to be made in little shapes for serving as a sweet, but you could also spread the paste out a bit thinner over two sheets to dry. The thinner paste can be cut into strips and wrapped in baking parchment for children’s lunches.
