Lightly poaching slices of pear in sugar syrup then drying them out in the oven transforms the delicate texture of a fresh pear into a crisp, sweet treat. They become slightly translucent in the process, making them look a little like stained glass. These are also wonderful dipped in melted dark chocolate.

Ingredients

  • 2 under-ripe pears, such as Comice
  • juice of 2 limes or lemons

Method

  1. Line a baking sheet with baking parchment. Preheat the oven to 110°C/225°F/Gas ¼.
