Originating in North Africa, dates stuffed with nut paste have long been a festive treat in the Middle East and the Mediterranean. Pistachios and dates have a natural affinity, since they grow in the same areas, and the combination is further enhanced in this delectable recipe by the inclusion of marzipan, orange rind and candied peel.

Ingredients

  • 12 dates, preferably Barhi or Medjool
  • 115 g/4 oz

Method

  1. Prepare the dates by slitting them down one side and removing the stones (pits) with the tip of a knife, leaving a cavity for the stuffing.
  2. Combine the marzipan, Kirsch and orange rind in a bowl and mix well using clean hands. Divide the flavoured marzipan into 12 pieces and roll into little balls.
