This recipe is based on a combination of the two main types of Indian sweets: ‘juicy’ and ‘dry’. The ‘juicy’ ones are soaked in sugar syrups, while the ‘dry’ ones are usually semolina- and nut-based. They often include plenty of pistachios and clarified butter. This essentially ‘dry’ sweet is very simple, made with ground nuts, sugar and a dash of salt, moistened with a little Kirsch for flavour.
