Amarena cherries are a wild Italian variety of the fruit. They are very sour straight from the tree, but they are stoned (pitted) and packed in sugar in jars. The sugar macerates the cherries and extracts their natural juices, creating a delicious syrup. They can be found in speciality delicatessens and Italian stores, and are worth seeking out.
