This is a hard version of liquorice, to suck on rather than chew. The bicarbonate of soda lightens the texture a little, so the shards are slightly brittle. Liquorice roots are available in most health food stores and in some traditional sweet shops as well. If you cannot find them, you could use a star anise pod instead, which are easier to obtain.
