A version of this traditional classic is made by almost every good chocolatier. You could make them with any sparkling wine that you like to drink, such as prosecco or cava, instead of Champagne. Rosé Champagne makes an especially delicious truffle. Here real gold dust has been used for an extra-special feel, but you could just finish them with an extra roll in icing sugar, if you like.
