A plant with endless uses, lavender looks beautiful, smells wonderful and has relaxing and soothing properties. Its delicate taste is especially suited to sweet honey and creamy milk chocolate. An edible shimmery dust provides the perfect finishing touch to these truffles, but you can always omit it for a simpler treat.

Ingredients

  • butter, for greasing
  • 200 ml/7 fl oz/scant 1 cup double (heavy) cream

Method

  1. Grease a 20cm/8in square baking tin (pan) and line with clear film (plastic wrap).
  2. Place the cream, liquid glucose and honey in a small pan. Bring to just under the boil and stir to blend in the glucose and honey. Add the lavender buds and remove from the heat. Cover and leave to steep for 15 minutes, then heat to just under the boil again.
