You could use any of your favourite nuts here, but the macadamia works very well, especially with the buttery crunchy coating they have once caramelized. A sprinkling of salt adds an extra dimension to the chocolate and nut flavour combination. Use a good quality sea salt, such as Maldon, for the best taste.

  • 200 g/7 oz/1 cup caster (superfine) sugar

  1. Line two baking trays with baking parchment and set aside.
  2. Put the sugar and half of the butter in a small pan and warm over a medium heat until the butter starts to bubble.
  3. Add the chopped macadamia nuts and, using a wooden spoon, stir constantly until coated. Stir in the remaining butter, then remove from the heat.
