These impressive-looking twice-dipped chocolates are as delicious as they are beautiful. Using acetate sheets to transfer a thin film of coloured cocoa butter to the surface is fairly simple and the result looks professional. Working with teas in ganaches is also very interesting. Use a high-quality tea leaf, such as silver-tip jasmine, so that the delicate flavour of the green tea leaves comes through as well as the perfumed jasmine flowers.
