A meltaway centre is different from a ganache one, because it uses coconut oil or cocoa butter instead of cream. This creates a silky texture that melts in your mouth very quickly. Once mixed with chocolate, the flavour of coconut oil is undetectable. Do not overheat the oil as it can burn the chocolate, resulting in a grainy texture.

Ingredients

  • 115 g/4 oz coconut oil
  • 450 g/1

Method

  1. Line a 15cm/6in or 20cm/8in square cake tin (pan) with baking parchment. The size of tin you choose depends on how thick or thin you want the meltaways to be – a smaller tin will create a thicker confection.
  2. Melt the coconut oil very gently in a large heatproof bowl set over a pan of simmering water. Use a sugar thermometer to ensure it does not rise above 24°C
