Roches are essentially nut clusters held together with chocolate. What makes them so special is the texture and finish imparted by the use of cocoa butter. You will need to work quickly so that the chocolate and cocoa butter do not set before you finish forming the roches. You could experiment with other nuts and different types of chocolate, such as almond and milk chocolate, or macadamia and white chocolate.
