Eggplant Rolls

This recipe is a Spanish take on the Italian involtini. Eggplant is thinly sliced and wrapped around a filling of soft cheese, ham, and fresh herbs. Choose a creamy cheese that melts well such as a young Mahón, a tetilla, or a young ibérico, which is similar to Jack cheese in its flavor, creaminess, and excellent melting capabilities.
