The spicy paprika in this smoky and garlicky mojo picón sauce, gives the pork a red hue. The addition of the caramelized onions on a toasted roll makes for a satisfying lunch or a sandwich on the go. It can be served hot or cold.
In a large dish, whisk together 2 tablespoons of the oil, the garlic, red pepper flakes, paprika, vinegar, and ½ teaspoon of the salt. Add the pork. Cover and refrigerate for several hours, or overnight.
