La Bomba (the Bomb) is believed to have originated in a bar in Barcelona, inspired by the bombings that occurred during the Spanish Civil War (1936–1939). These delicious ball-shaped croquetas of mashed potatoes are filled with meat, then breaded and fried. Enjoy with a fiery salsa brava.

Ingredients

  • 1 pound Yukon gold potatoes, peeled and halved
  • Neutral oil for cooking
