La Bomba (the Bomb) is believed to have originated in a bar in Barcelona, inspired by the bombings that occurred during the Spanish Civil War (1936–1939). These delicious ball-shaped croquetas of mashed potatoes are filled with meat, then breaded and fried. Enjoy with a fiery salsa brava.
To make the potatoes, fill a medium saucepan with water, add a large pinch of salt, and bring to a boil over high heat. Add the potatoes and cook over medium-high heat until easily pierced with a knife, 15 to 20 minutes.
