Gazpacho is a staple of Spanish cuisine and is a refreshing cold soup enjoyed almost daily during the summer months, especially in Andalusia. The smoked paprika breadcrumbs add a flavorful, crunchy finish.

Ingredients

  • 1 cup stale bread cubes
  • 1 red bell pepper, quartered and seeded
  • 2 cloves

Method

Add the bread to the blender and pulse until fine. Remove ¼ cup of the breadcrumbs and set aside.

Add the bell pepper, garlic, tomatoes, ½ cup of the oil, vinegar, cucumber, and salt to the blender and process until smooth. Transfer to a large bowl, cover, and refrigerate for at least 1 hour, up to overnight.
