This Spanish “fierce” sauce has a spicy kick. Typically served with Patatas Bravas, it is equally delicious with grilled meats and fish. Note that paprika burns easily, so be sure to add it toward the end of cooking.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, coarsely chopped
  • 3 cloves

Method

In a medium sauté pan or skillet, warm the oil over medium-high heat. Add the onion and garlic and sauté until soft and translucent, 5 to 7 minutes. Season with the salt. Reduce the heat to low, add the tomato paste, and stir for 1 minute. Add the flour, stirring and cooking for another 1 to 2 minutes. Whisk in the broth and raise the heat to medium-low.
