  • About

These twice-baked cookies, flavored with orange and almonds, are a traditional sweet from Catalonia. Known for their satisfyingly crisp and dry texture, Carquinyolis are usually enjoyed dipped in a sweet wine, making them the perfect accompaniment to an after-dinner drink or a leisurely coffee.

Ingredients

  • ¼ cup raw, whole almonds, skins on
  • 1 large egg
  • ½ cup

Method

Place the almonds in small bowl and add enough water to cover them. Let soak for 30 minutes, or until the skins slide off easily.

Preheat the oven to 325°F. Line a baking sheet with parchment paper.

In a medium bowl, whisk together the egg, sugar, orange zest, and juice
