These sweet, fried balls of dough are traditionally flavored with anise liqueur and served on All Saints’ Day in Catalonia. Bunyols are easy to make and so light and airy (de vent, meaning “of wind”) that they literally double in size when fried.
Although now eaten to celebrate a Catholic holiday, these delicious treats were made as early as the tenth century by the Jewish people, who called them bimuelos and ate them in celebration of Hanukkah.
