This makes a delicious, ruby-hued alternative to sloe gin. Traditionally, sloes are picked after the first frost or pricked with a pin to encourage the maceration process, and autumn olives benefit from a helping hand too. All that pricking is a bit tedious and the same effect can be achieved by putting the fruit in the freezer for a couple of hours before getting started with the recipe.
