Wineberries make a seductively sweet and tangy vinegar, perfect for trickling over salads, goat’s cheese, even ice cream. Ensure you gather the ripened fruit on a dry day This recipe works very well with mulberries too.

  • 600 ml cider or white wine vinegar

Method

Put the wineberries into a large bowl and crush them lightly with the back of a wooden spoon. Pour over the vinegar, cover and leave to macerate for a week, stirring from time to time. Strain through a piece of muslin suspended over a bowl or through a scalded jelly bag, squeezing out as much juice as possible. Measure the juice and transfer to a pan. Add
