This may seem a little bit fussy for something as simple as an omelette, but it really is best to chop the herbs separately before mixing them together. That way you get each one to the desired level of fineness without over working the leaves.

Ingredients

  • 2-3 eggs
  • Salt and freshly ground black pepper
  • 1 garlic clove
  • 1

Method

Break the eggs into a medium bowl and season well with salt and freshly ground black pepper.

Cut the garlic clove in half and rub the tines of a fork with the cut sides; discard the clove. Scatter the herbs over the eggs and whisk gently with the fork.

Heat a 20-22cm omelette pan or frying pan over a high heat. Add the butter and sizzle until it just begins to turn a fine golden
