Steamed artichokes dipped into a Classic Vinaigrette or melted butter stirred with a spritz of lemon juice eaten slowly, one sparkling petal at a time, are one of summer’s greatest, slowest pleasures. But if you want to turn artichokes into a spectacular and substantial starter, do try stuffing them. The prep may be a little fiddly, but the results are most certainly worth it.
