Asparagus - boiled, steamed, roasted or grilled - I can’t get enough of it in spring. Its season is so short, I like to eat it as often as I can, either dipped into a mustardy vinaigrette or alongside this marvellous pale green mayonnaise.
First, make the mayonnaise. Pound the garlic cloves into a paste with a pinch of salt in a pestle and mortar, or on a chopping board with a sharp knife. Place the garlicky paste into a bowl with the egg yolk, lemon juice and wasabi or horseradish and whisk together until smooth.
