Romesco sauce, that most vibrantly hued Catalonian delight, is most traditionally served with seafood but it works wonderfully well as a dip for warm, middle eastern flatbreads, with grilled meats and roasted vegetables. It is, in fact, very good served alongside or trickled over romanesco cauliflower roasted as in the preceding recipe. It really is. I’m not just saying this because serving up a plate of Romesco Romanesco sounds too good to resist.
