This bisque was a game changer for me when I first tasted it. The sweetness of the caramelized shallot combined with the sweet and nutty flavor of the roasted garlic takes this bisque to higher heights. Enjoy with a slice of toasted baguette or crunchy croutons.
To make the caramelized shallots, in large skillet over medium heat, melt the butter and olive oil. Add the shallots and sugar. Mix well. Cook, stirring occasionally, for 35–40 minutes, until the shallots are softened and caramel in color. Set aside.
