I’ll find any excuse to brown some butter. The aroma that lingers afterward is wonderfully fragrant. Tortellini is an elite pasta in my eyes, especially during the winter months. I know winter pasta isn’t a common concept, but this dish is truly like a warm hug on a cold day.
Bring the water and salt to a boil over high heat. Add the tortellini, reduce the heat to medium, and cook for 7–8 minutes, until they are al dente and float to the surface of the water.
Drain and set aside.
Place the butter in a large skillet over medium heat and melt it fully. Add the garlic and rosemary. Cook, stirring frequently to prevent the garlic and butter from burning,
