I couldn’t close this chapter without including a solid fish recipe. I lean on fish a lot, especially on weeknights when I need to get something on the table and may not have the bandwidth to cook for an hour. This recipe calls for a filleted branzino. I always ask for my fish to be filleted at the fish counter when I purchase it.
Place the branzino, skin-side down, on a clean surface lined with a paper towel and gently pat it dry.
Coat the fish in 1 teaspoon of avocado oil and season with 1 teaspoon of WhiteSpice, 1 teaspoon of YardSpice, the ground mustard, and salt. Rub the seasonings on the fish, then sprinkle on the flour, ensuring to pack everything on. This will help give the fish a great crust.
