I could easily eat these Black-Eyed Peas with rice daily! There is an old superstition that says if you start the New Year with a fresh pot of black-eyed peas, you welcome a year of joy, luck, and prosperity—that’s exactly what I felt in deciding to add these flavorful peas to the Soul Bowl.

Method

In a medium pot over medium-high heat, warm the butter and olive oil together. Add the garlic, onion, and bell pepper and cook, stirring occasionally, for 2–3 minutes, until softened and fragrant. Add the peas and cook for 1 minute longer.
