Whenever I can use a bit of a reset, or just need to take a step back from excess meat and carbs—my absolute favorite things—I reach for this skillet. The toppings can vary. Sometimes I top it with diced tomatoes or guacamole. The last time, I made toasted tortilla strips to add some crunch.
