This spice cake endured plenty of trial and error to reach its current state of success. It is sweet, moist, and simply delicious. The bourbon glaze is one of the details that makes this cake sing. I swoon over the richness of the bourbon, which is paired with the sweet-salty balance of salt, cinnamon, sugar, and vanilla.

For the Cake

  • 1 lb ripe Bartlett or Bosc pears, peeled, cored, and chopped
  • ½ cup granulated sugar, divided

Method

To make the cake, in a medium saucepan over medium heat, combine the pears, ¼ cup granulated sugar, the water, and lemon juice. Cook, stirring occasionally, until the pear is softened, about 7 minutes. Transfer the mixture to a blender and process to a smooth puree. You should have 1½ cups of puree. Transfer the puree to a medium bowl and let cool for 10 minutes.
