This Ginger Simple Syrup tastes fresh and is not too thick, as some store-bought syrups can be. It is a great boost for your cocktails or mocktails. Try it with the Island Ting. You can also make a fresh homemade ginger ale by adding this syrup to a glass of regular club soda.

  • ½ cup firmly packed dark brown sugar

Method

In a medium saucepan over medium-high heat, completely dissolve the granulated sugar and brown sugar in the water, stirring constantly.

Add the allspice and ginger and bring to a gentle boil, stirring occasionally. Cook and stir for 2 minutes, then reduce the heat to low to maintain a low simmer, cover, and cook for 15 minutes longer, until syrup-like consistency is formed.
