The method for tea smoking sounds lengthy and difficult, but it is actually quite simple. You can cook the fish by grilling or pan-frying.

  • 750 g ( lb) baby new potatoes (chats)

Method

TO COOK VEGETABLES, place the potatoes in a large saucepan and cover with water. Bring to the boil over a high heat and then turn down to a simmer and cook until the potatoes are just tender, about 10 minutes. Drain them in a colander. When they are cool, cut them into quarters and set aside. Top and tail the beans and blanch them in boiling water until just tender. Refresh in cold water
