At the restaurant we make this tart with a lemonade fruit curd, and usually a mixture of pink grapefruit, oranges, blood oranges and lemonade fruit segments for the top. Lemonade fruit is an original variety from India and Thailand. It has a sweet lime / grapefruit flavour with a hint of mandarin. If you cani get lemonade fruit you can substitute lemons.
