If you want a spicy pickle, a little fresh red chilli pepper, ginger and garlic could be added to the pickling liquid. This pickle should keep for up to 1 month in the refrigerator, stored in clean, sterilised jars.

TO PREPARE PAPAYA, halve the papaya lengthwise and scrape out the seeds. Depending upon its size, slice it as thinly as possible into pieces approximately 10 cm (4 in) long and place them in a large
