Whether it is on the menu or not, we always have a supply of pesto in the coolroom. It can be mixed with pasta or into a salad dressing, or used to accompany almost anything else.

PREHEAT THE OVEN to 180°C (355°F). Place the pine nuts on a baking sheet and roast them until they are golden brown. Set aside until they are cool.
