This classic French confection is not generally served for afternoon tea. But it is certainly not out of place, particularly if you need a gluten-free treat. The cherries and apricots are wonderful little nuggets of tartness nestled in the honey-sweetened nougat, and the pistachios add both color and crunch. Making the nougat recipe requires a little time and patience (and a candy thermometer), but it is well worth the effort. The nougat also makes a lovely edible gift.
