Antonin Carême’s menu of January 18, 1817, for the grand banquet at the Royal Pavilion included a tower of profiteroles with aniseed. These traditional choux buns are filled with cream flavored with vanilla (in place of the aniseed) and are enveloped in crisp, glistening caramel. They add a lovely Gallic touch to afternoon tea.
