We are led to believe that traditional Seville orange marmalade was a staple in Winston Churchill’s diet, no doubt eaten on hot buttered toast for breakfast. This cake is always enjoyed by marmalade lovers. Made with whole-grain spelt flour and with maple syrup in place of sugar, it is light but slightly nutty in texture and is not too sweet. It is finished with a delicious orange-infused, crunchy topping.
